Zucchini Flan with Tomato Coulis Recipe

Ingredients:

  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 350°F.
  2. Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté for 5-7 minutes until softened.
  3. Add the sliced zucchinis and sauté for another 5 minutes until they are cooked through and tender.
  4. In a mixing bowl, whisk together the eggs, heavy cream and Parmesan cheese. Add salt and pepper to taste.

  • 1 can of peeled plum tomatoes
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)

Directions:

  1. Heat olive oil in a saucepan over medium heat. Add the chopped onion and garlic and sauté for 5 minutes until softened.
  2. Add the canned tomatoes and the dried basil. Season with salt and pepper to taste.
  3. Simmer for 15-20 minutes until the tomatoes break down and the sauce thickens.
  4. Using a blender or food processor, puree the tomato mixture until smooth.
  5. Adjust the seasoning as necessary and add a pinch of crushed red pepper flakes if desired.
  6. Serve the tomato coulis over the zucchini flan.
