Zucchini Flan with Tomato Coulis Recipe
Ingredients:
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 eggs
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil

Directions:
- Preheat the oven to 350°F.

- Salt and pepper to taste
- Crushed red pepper flakes (optional)

- Heat olive oil in a saucepan over medium heat. Add the chopped onion and garlic and sauté for 5 minutes until softened.
- Add the canned tomatoes and the dried basil. Season with salt and pepper to taste.
- Simmer for 15-20 minutes until the tomatoes break down and the sauce thickens.
- Using a blender or food processor, puree the tomato mixture until smooth.
- Adjust the seasoning as necessary and add a pinch of crushed red pepper flakes if desired.
- Serve the tomato coulis over the zucchini flan.
