Zucchini Flan with Thermomix
Ingredients:
- 2 zucchinis
- 4 eggs
- 1 cup of milk
- 1/2 cup of grated Parmesan cheese
- 1/2 onion
- 2 cloves of garlic
- 2 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Chop the onion and mince the garlic.
- Cut the zucchinis into small pieces.
- In the Thermomix, add the olive oil and sauté the onions and garlic for 3 minutes at 120°C on speed 1.
- Add the zucchinis and sauté for another 5 minutes at 120°C on speed 1.
- In a separate bowl, beat the eggs and add the milk, Parmesan cheese, salt, and pepper. Mix well.
- Add the zucchini mixture to the egg mixture and mix well.
- Pour the mixture into a greased ovenproof dish.
- Bake for 30-35 minutes until golden brown on top and fully cooked.
- Allow to cool for a few minutes before serving.
