Zucchini Flan with Thermomix

Ingredients:

  • 2 zucchinis
  • 4 eggs
  • 1 cup of milk
  • 1/2 cup of grated Parmesan cheese
  • 1/2 onion
  • 2 cloves of garlic
  • 2 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Chop the onion and mince the garlic.
  3. Cut the zucchinis into small pieces.
  4. In the Thermomix, add the olive oil and sauté the onions and garlic for 3 minutes at 120°C on speed 1.
  5. Add the zucchinis and sauté for another 5 minutes at 120°C on speed 1.
  6. In a separate bowl, beat the eggs and add the milk, Parmesan cheese, salt, and pepper. Mix well.
  7. Add the zucchini mixture to the egg mixture and mix well.
  8. Pour the mixture into a greased ovenproof dish.
  9. Bake for 30-35 minutes until golden brown on top and fully cooked.
  10. Allow to cool for a few minutes before serving.
