Zucchini Quiche Recipe

Ingredients:

  • 1 pie crust, store-bought or homemade
  • 1 tbsp unsalted butter
  • 1 small onion, chopped
  • 2 medium zucchinis, thinly sliced
  • 4 eggs, beaten
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Roll out the pie crust and press it into a 9-inch quiche dish. Prick the bottom with a fork and set aside.
  3. Melt the butter in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  4. Add the sliced zucchini to the skillet and sauté until tender, about 10 minutes. Season with salt and pepper, to taste.
  5. In a medium bowl, whisk together the beaten eggs, heavy cream, and shredded cheddar cheese.
  6. Add the sautéed zucchini and onion to the egg mixture and stir to combine.
  7. Pour the filling into the prepared pie crust.
  8. Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
  9. Remove from the oven and allow to cool for a few minutes before slicing and serving.
