Zucchini Stuffed with Rice Recipe

Ingredients:

  • 4 medium-sized zucchinis
  • 1 cup of uncooked white rice
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons of olive oil
  • 1 can of diced tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Instructions:

  1. Cut off the tops of the zucchinis and scoop out the flesh with a spoon.
