Zucchini Turnover Recipe

Ingredients:

  • 1 zucchini, washed and diced
  • 1 onion, diced
  • 1 clove of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1 package puff pastry sheets, thawed
  • 1 egg, beaten

Instructions:

  1. Preheat the oven to 400°F.
  2. In a frying pan, heat the olive oil over medium heat. Add the onions and sauté for 2-3 minutes.
  3. Add the zucchini and garlic to the frying pan, along with salt and pepper to taste. Cook for an additional 5-7 minutes until the zucchini is softened, stirring occasionally.
  4. Roll out the puff pastry sheet and cut it into four squares. Divide the zucchini filling evenly among the squares, leaving about 1/2 inch border on the edges.
  5. Sprinkle the feta cheese on top of each zucchini filled puff pastry square.
  6. Brush the edges of each square with beaten egg.
  7. Close the turnover by bringing two opposite corners together, making a triangle, and pressing the edges together with a fork.
  8. Brush the top of the turnover triangles with the remaining beaten egg.
  9. Bake the zucchini turnover in the oven for 20-25 minutes, or until golden brown and puffed up.
  10. Remove the turnovers from the oven and allow them to cool for a few minutes before serving.
