Almond Sponge Cake Recipe

Ingredients:

  • 6 eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup almond meal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. Grease a 9-inch (23cm) springform cake pan with butter or cooking spray.
  3. In a large mixing bowl, beat the eggs with an electric mixer until pale and frothy.
  4. Add the sugar and continue beating on medium speed for 5-7 minutes or until the mixture becomes thick and creamy.
  5. Sift in the flour, almond meal, baking powder, and salt into the bowl, and gently fold the dry ingredients into the egg mixture until well combined.
  6. Add vanilla extract and mix it with the batter until well combined.
  7. Pour the batter into the prepared cake tin and smooth the surface with a spatula.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes.
  10. After 10 minutes remove it from the tin and let it cool completely.
