Anise Cakes Recipe
Ingredients
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 tablespoon of anise seeds, crushed
- 1/2 cup of unsalted butter, softened
- 1 cup of granulated sugar
- 2 large eggs
- 1 cup of milk
- 1 teaspoon of vanilla extract
Instructions
- Preheat your oven to 350°F (180°C) and lightly grease a muffin tin with cooking spray or butter.
- In a bowl, whisk together the flour, baking powder, salt, and anise seeds, then set aside.
- In another bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, then stir in the milk and vanilla extract.
- Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix – the batter should be lumpy.
- Spoon the batter into the greased muffin tin, filling each cup two-thirds full.
- Bake for 20 to 25 minutes, until the cakes are golden brown and a toothpick inserted into the center comes out clean.
- Cool the cakes in the muffin tin for 5 minutes before removing them onto a wire rack to cool completely.
- Serve the anise cakes on their own or dusted with powdered sugar and paired with tea or coffee.
Verdict
These anise cakes have a light and fluffy texture with a subtle licorice flavor from the crushed anise seeds. They are perfect for a quick breakfast or an afternoon snack, and can be made ahead of time and stored in an airtight container for up to 3 days.
