anise cakes

Anise Cakes Recipe

Ingredients

  • 2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 tablespoon of anise seeds, crushed
  • 1/2 cup of unsalted butter, softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 cup of milk
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and lightly grease a muffin tin with cooking spray or butter.
  2. In a bowl, whisk together the flour, baking powder, salt, and anise seeds, then set aside.
  3. In another bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the milk and vanilla extract.
  5. Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix – the batter should be lumpy.
  6. Spoon the batter into the greased muffin tin, filling each cup two-thirds full.
  7. Bake for 20 to 25 minutes, until the cakes are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool the cakes in the muffin tin for 5 minutes before removing them onto a wire rack to cool completely.
  9. Serve the anise cakes on their own or dusted with powdered sugar and paired with tea or coffee.

Verdict

These anise cakes have a light and fluffy texture with a subtle licorice flavor from the crushed anise seeds. They are perfect for a quick breakfast or an afternoon snack, and can be made ahead of time and stored in an airtight container for up to 3 days.

Serving Suggestions
