Apple Pie
Ingredients:
- 2 and 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup unsalted butter, chilled and diced
- 1/4 to 1/2 cup ice water
- 6 cups sliced apples (tart apples like Granny Smith work well)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- 1 egg, beaten
Instructions:
- In a large mixing bowl, mix together 2 and 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar until well combined.
- Add in the diced unsalted butter and use a pastry cutter to mix until the mixture is crumbly.
- Add in 1/4 to 1/2 cup of ice water and mix until a dough forms.
- Divide the dough into two equal portions, wrap them in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine 6 cups of sliced apples, 1/2 cup of white sugar, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt, stirring until well combined.
- Roll out one portion of the dough on a floured surface and transfer it to a 9-inch pie dish.
- Add the apple mixture to the pie dish, dotting the top with 2 tablespoons of unsalted butter.
- Roll out the remaining portion of the dough on a floured surface and use it to cover the top of the pie, crimping the edges together with a fork or your fingers.
- Brush the top of the pie with the beaten egg.
- Make several slits in the top of the pie with a knife to vent steam.
- Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow the pie to cool before slicing and serving.
