Apple pie without compote


Apple Pie

Ingredients:

  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 1/4 to 1/2 cup ice water
  • 6 cups sliced apples (tart apples like Granny Smith work well)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 egg, beaten

Instructions:

  1. In a large mixing bowl, mix together 2 and 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar until well combined.
  2. Add in the diced unsalted butter and use a pastry cutter to mix until the mixture is crumbly.
  3. Add in 1/4 to 1/2 cup of ice water and mix until a dough forms.
  4. Divide the dough into two equal portions, wrap them in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 375°F (190°C).
  6. In a large mixing bowl, combine 6 cups of sliced apples, 1/2 cup of white sugar, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt, stirring until well combined.
  7. Roll out one portion of the dough on a floured surface and transfer it to a 9-inch pie dish.
  8. Add the apple mixture to the pie dish, dotting the top with 2 tablespoons of unsalted butter.
  9. Roll out the remaining portion of the dough on a floured surface and use it to cover the top of the pie, crimping the edges together with a fork or your fingers.
  10. Brush the top of the pie with the beaten egg.
  11. Make several slits in the top of the pie with a knife to vent steam.
  12. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  13. Allow the pie to cool before slicing and serving.
