Apple-Rhubarb Tart Recipe
Makes 8-10 servings
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 3-4 tablespoons ice water
- 2 cups diced apples
- 1 1/2 cups diced rhubarb
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 egg, beaten with 1 tablespoon of water (for egg wash)
Directions:
- In a large bowl, whisk together flour and salt. Cut in butter with a pastry blender until mixture resembles coarse crumbs.
- Add ice water gradually, stirring until dough comes together. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
- In a separate bowl, combine apples, rhubarb, sugars, spices, cornstarch, and lemon juice. Mix well.
- Preheat oven to 375°F. Roll out dough into a 12-inch circle on a lightly floured surface. Transfer to a 9-inch tart pan and trim edges.
- Spoon the apple-rhubarb mixture into the tart shell. Brush edges of the crust with egg wash.
- Bake for 40-45 minutes, until filling is bubbly and crust is golden brown. Allow to cool before slicing and serving.
