Apple-Rhubarb Tart Recipe

Makes 8-10 servings

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 3-4 tablespoons ice water
  • 2 cups diced apples
  • 1 1/2 cups diced rhubarb
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 egg, beaten with 1 tablespoon of water (for egg wash)

Directions:

  1. In a large bowl, whisk together flour and salt. Cut in butter with a pastry blender until mixture resembles coarse crumbs.
  2. Add ice water gradually, stirring until dough comes together. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  3. In a separate bowl, combine apples, rhubarb, sugars, spices, cornstarch, and lemon juice. Mix well.
  4. Preheat oven to 375°F. Roll out dough into a 12-inch circle on a lightly floured surface. Transfer to a 9-inch tart pan and trim edges.
  5. Spoon the apple-rhubarb mixture into the tart shell. Brush edges of the crust with egg wash.
