Apricot Chicken Tagine Recipe
Ingredients
- 1 kg boneless and skinless chicken thighs, cut into bite-size pieces
- 2 tbsp olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups chicken broth
- 1/2 cup apricots, cut into small pieces
- 1/4 cup honey
- 2 tbsp lemon juice
- 2 tbsp cornstarch
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the chicken pieces and cook until browned on all sides, about 5 minutes.
- Remove the chicken from the pot and set aside.
- Add the diced onion and minced garlic to the pot and cook until the onions are translucent, about 5 minutes.
