Ingredients

  • 1 kg boneless and skinless chicken thighs, cut into bite-size pieces
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups chicken broth
  • 1/2 cup apricots, cut into small pieces
  • 1/4 cup honey
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5 minutes.
  3. Remove the chicken from the pot and set aside.
  4. Add the diced onion and minced garlic to the pot and cook until the onions are translucent, about 5 minutes.
  5. Add the ground cumin, ground cinnamon, ground ginger, paprika, salt, and black pepper to the pot and stir until fragrant, about 1 minute.
  6. Return the chicken to the pot and stir until coated in the spice mixture.
  7. Add the chicken broth, apricots, honey, and lemon juice to the pot and stir to combine.
  8. Bring the mixture to a simmer and cook for 30-40 minutes or until the chicken is tender.
  9. In a small bowl, mix together the cornstarch and 2 tablespoons of water until smooth.
  10. Add the cornstarch mixture to the pot and stir until the sauce thickens, about 5 minutes.
  11. Remove from the heat and let the tagine rest for 5 minutes before serving.
