Apricot tatin

Apricot Tatin Recipe

Ingredients:

  • 6-7 apricots, halved and pitted
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 sheet puff pastry, thawed

Instructions:

  1. Preheat oven to 375°F.
  2. In an oven-safe skillet, melt the butter over medium heat. Add the sugar and vanilla extract, and stir until well combined.
  3. Arrange the apricot halves, cut side down, in the skillet with the butter and sugar mixture.
  4. Cook the apricots for 5-7 minutes, or until they start to release their juices and the sugar mixture begins to thicken and turn golden brown.
  5. Meanwhile, roll out the puff pastry to fit over the skillet and cut into a circle slightly larger than the skillet.
  6. Place the puff pastry over the apricots, tucking the edges in around the fruit.
  7. Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  8. Remove from the oven and let cool for 5-10 minutes.
  9. Place a large serving plate over the skillet and carefully invert the skillet onto the plate to release the tatin. Serve warm.
