- 6-7 apricots, halved and pitted
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 sheet puff pastry, thawed
Instructions:
- Preheat oven to 375°F.
- In an oven-safe skillet, melt the butter over medium heat. Add the sugar and vanilla extract, and stir until well combined.
- Arrange the apricot halves, cut side down, in the skillet with the butter and sugar mixture.
- Cook the apricots for 5-7 minutes, or until they start to release their juices and the sugar mixture begins to thicken and turn golden brown.
- Meanwhile, roll out the puff pastry to fit over the skillet and cut into a circle slightly larger than the skillet.
- Place the puff pastry over the apricots, tucking the edges in around the fruit.
- Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool for 5-10 minutes.
- Place a large serving plate over the skillet and carefully invert the skillet onto the plate to release the tatin. Serve warm.
