Artichoke Smoothie Recipe
Ingredients:
- 1 frozen banana
- 3/4 cup almond milk
- 1/3 cup canned artichoke hearts
- 1 teaspoon honey
- 1/4 teaspoon ground ginger
Instructions:

Ricotta Curry Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon garam masala
- 1 teaspoon chili powder, optional
- 1 cup chopped tomatoes
- 1 cup water
- 1 (14 ounce) can chickpeas, drained and rinsed
- 1 cup ricotta cheese
- salt and pepper to taste
Instructions:
- Add the olive oil to a pot over medium heat.
- Add the chopped onion and garlic and cook for a few minutes.
- Add in the grated ginger, turmeric, cumin, garam masala and chili powder if using.
- Cook for another minute until fragrant.
- Add in the chopped tomatoes, water and chickpeas.
- Simmer for 10 minutes.
- Stir in the ricotta cheese and season with salt and pepper to taste.
- Cook for a few more minutes.
- Serve with cooked couscous or favorite side dish.
