Artichoke Smoothie Recipe

Ingredients:

  • 1 frozen banana
  • 3/4 cup almond milk
  • 1/3 cup canned artichoke hearts
  • 1 teaspoon honey
  • 1/4 teaspoon ground ginger

Instructions:

  1. Add all ingredients in to a high-speed blender and blend until smooth.
  2. Taste and adjust flavours as desired.
  3. Pour into a glass and enjoy!

Ricotta Curry Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • 1 teaspoon chili powder, optional
  • 1 cup chopped tomatoes
  • 1 cup water
  • 1 (14 ounce) can chickpeas, drained and rinsed
  • 1 cup ricotta cheese
  • salt and pepper to taste

Instructions:

  1. Add the olive oil to a pot over medium heat.
  2. Add the chopped onion and garlic and cook for a few minutes.
  3. Add in the grated ginger, turmeric, cumin, garam masala and chili powder if using.
  4. Cook for another minute until fragrant.
  5. Add in the chopped tomatoes, water and chickpeas.
  6. Simmer for 10 minutes.
  7. Stir in the ricotta cheese and season with salt and pepper to taste.
  8. Cook for a few more minutes.
  9. Serve with cooked couscous or favorite side dish.
