Barry Soup Recipe

Ingredients

  • 1 medium-sized onion, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 2 cups of peeled and cubed potatoes
  • 4 cups chicken or vegetable broth
  • 1 cup of chopped kale
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 cup of cooked white beans
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat some olive oil over medium heat. Saute the chopped onion, celery, and garlic until the onion is translucent and the celery is softened, about 5-7 minutes.
  2. Add the cubed potatoes, chicken or vegetable broth, chopped kale, bay leaf, and thyme to the pot. Season with salt and pepper to taste.
  3. Bring the soup to a simmer and let it cook until the potatoes are soft, about 25-30 minutes.
  4. Once the potatoes are soft, remove the bay leaf from the pot. Use an immersion blender to blend the soup until it is creamy and smooth.
  5. Stir in the cooked white beans and heat the soup through, about 5-10 minutes.
  6. Taste and adjust the seasoning as needed.
  7. Serve the soup hot with some crusty bread on the side.
