Barry Soup Recipe
Ingredients
- 1 medium-sized onion, chopped
- 1 celery stalk, chopped
- 2 garlic cloves, minced
- 2 cups of peeled and cubed potatoes
- 4 cups chicken or vegetable broth
- 1 cup of chopped kale
- 1 bay leaf
- 1 teaspoon thyme
- 1 cup of cooked white beans
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat some olive oil over medium heat. Saute the chopped onion, celery, and garlic until the onion is translucent and the celery is softened, about 5-7 minutes.
- Add the cubed potatoes, chicken or vegetable broth, chopped kale, bay leaf, and thyme to the pot. Season with salt and pepper to taste.
- Bring the soup to a simmer and let it cook until the potatoes are soft, about 25-30 minutes.
- Once the potatoes are soft, remove the bay leaf from the pot. Use an immersion blender to blend the soup until it is creamy and smooth.
- Stir in the cooked white beans and heat the soup through, about 5-10 minutes.
- Taste and adjust the seasoning as needed.
- Serve the soup hot with some crusty bread on the side.
