Ingredients:

  • 6 large eggs
  • 1/2 cup cooked beets, sliced
  • 1/4 cup crumbled goat cheese
  • 1/4 cup milk or cream
  • 1 tbsp. olive oil
  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Directions:

  1. Preheat oven to 375°F.
  2. Beat eggs with milk or cream, salt, and black pepper.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté for 2-3 minutes or until onion is soft and translucent.
  4. Add sliced beets to the skillet and sauté for another 2-3 minutes.
