Ingredients:

  • 2 medium beets, roasted
  • 1 can chickpeas, rinsed and drained
  • 3 cloves garlic, chopped
  • ¼ cup tahini
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Water to thin as needed
  • Parsley or cilantro for garnish (optional)

Instructions:

  1. Preheat oven to 375°F. Wash beets and wrap them in aluminum foil, making sure they are completely covered. Roast them for 45-50 minutes, or until tender.
  2. Remove the skin of the roasted beets and chop them into chunks.
  3. In a food processor, add the chickpeas, garlic, tahini, lemon juice, olive oil, cumin, paprika, salt, and pepper, and pulse until you have a smooth paste.
  4. Add the chopped beets to the food processor and blend until the beets are fully incorporated and the hummus is completely smooth. If the mixture is too thick, add water to thin it to your desired consistency.
  5. Taste and adjust seasoning as per your preference.
