Beet Hummus & Zahtar Recipe

Ingredients:

  • 2 medium beets, roasted and peeled
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1-2 tsp zahtar (Middle Eastern spice blend)

Instructions:

  1. Preheat oven to 400°F. Wrap beets in foil and roast for 45-60 minutes, until fork tender. Let cool completely before handling. Once cooled, peel the beets and cut into chunks.
  2. In the bowl of a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Process until smooth, scraping down the sides as needed. Taste and adjust seasoning, if necessary.
  3. Spoon the hummus into a serving bowl. Sprinkle with zahtar and drizzle with a little extra olive oil, if desired. Serve with pita wedges, sliced vegetables, or crackers.
