Bellini – Regal

Ingredients:

  • 4 ripe peaches, peeled, pitted, and chopped
  • 1/3 cup sugar
  • 1/3 cup water
  • 1 bottle chilled Prosecco
  • Fresh mint leaves for garnish

Instructions:

  1. In a blender, puree the peaches until smooth.
  2. In a small saucepan, combine the sugar and water and bring to a boil over medium heat. Stir until the sugar dissolves.
  3. Remove from heat and let the syrup cool.
  4. In a large pitcher, combine the peach puree and syrup and mix well.
  5. Chill in the refrigerator for at least 30 minutes.
  6. To serve, fill champagne flutes halfway with the peach mixture and top off with Prosecco.
  7. Garnish with fresh mint leaves.
