Bolognese Cannelloni

Ingredients

  • 12 cannelloni tubes
  • 500g beef mince
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 400g can chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 cup beef stock
  • Salt and pepper
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 180°C.
  2. Cook the cannelloni tubes according to the package instructions. Drain and set aside.
  3. In a large saucepan, cook the beef mince over medium heat until browned. Remove from the pan and set aside.
  4. In the same saucepan, cook the onion, garlic, carrot, and celery until softened.
  5. Add the chopped tomatoes, tomato paste, oregano, basil, thyme, beef stock, and browned beef mince to the saucepan. Season with salt and pepper to taste.
  6. Simmer for 20 minutes, or until the sauce has thickened.
  7. Spoon the bolognese sauce into a piping bag or a zip-lock bag with the corner snipped off.
  8. Stuff the cannelloni tubes with the bolognese sauce using the piping bag or the zip-lock bag.
  9. Place the stuffed cannelloni tubes in a baking dish. Cover with the grated mozzarella and parmesan cheese.
  10. Bake for 30 minutes, or until the cheese is melted and bubbly.
  11. Serve hot with a side salad.
