Bolognese Cannelloni
Ingredients
- 12 cannelloni tubes
- 500g beef mince
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, finely chopped
- 2 celery stalks, finely chopped
- 400g can chopped tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 cup beef stock
- Salt and pepper
- 1 cup grated mozzarella cheese
- 1/2 cup grated parmesan cheese
Instructions
- Preheat the oven to 180°C.
- Cook the cannelloni tubes according to the package instructions. Drain and set aside.
- In a large saucepan, cook the beef mince over medium heat until browned. Remove from the pan and set aside.
- In the same saucepan, cook the onion, garlic, carrot, and celery until softened.
- Add the chopped tomatoes, tomato paste, oregano, basil, thyme, beef stock, and browned beef mince to the saucepan. Season with salt and pepper to taste.
- Simmer for 20 minutes, or until the sauce has thickened.
- Spoon the bolognese sauce into a piping bag or a zip-lock bag with the corner snipped off.
- Stuff the cannelloni tubes with the bolognese sauce using the piping bag or the zip-lock bag.
- Place the stuffed cannelloni tubes in a baking dish. Cover with the grated mozzarella and parmesan cheese.
- Bake for 30 minutes, or until the cheese is melted and bubbly.
- Serve hot with a side salad.
