Braised Endives

Ingredients:

  • 4 endives
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1/2 cup chicken or vegetable broth
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Peel off any blemished outer leaves of the endives and slice them in half lengthwise.
  3. In an ovenproof skillet over medium heat, melt the butter and add sugar. Cook for 2-3 minutes until the sugar dissolves and becomes slightly caramelized.
  4. Add the endives, cut side down, and cook for 2-3 minutes until browned. Turn the endives over, then add chicken or vegetable broth. Cover the skillet with foil and bake in the oven for 20-25 minutes, until the endives are tender.
  5. Season with salt and pepper, to taste, and serve hot.
