Braised Endives
Ingredients:
- 4 endives
- 2 tablespoons butter
- 2 tablespoons sugar
- 1/2 cup chicken or vegetable broth
- Salt and pepper, to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Peel off any blemished outer leaves of the endives and slice them in half lengthwise.
- In an ovenproof skillet over medium heat, melt the butter and add sugar. Cook for 2-3 minutes until the sugar dissolves and becomes slightly caramelized.
- Add the endives, cut side down, and cook for 2-3 minutes until browned. Turn the endives over, then add chicken or vegetable broth. Cover the skillet with foil and bake in the oven for 20-25 minutes, until the endives are tender.
- Season with salt and pepper, to taste, and serve hot.
