Butternut Soup with Grilled Bacon
Ingredients
- 1 large butternut squash, peeled and chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4-5 cups chicken or vegetable broth
- 1 cup heavy cream
- 4-6 slices of bacon, grilled and chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until onion is soft and translucent, about 5 minutes.
- Add chopped butternut squash to the pot and stir to combine. Cook for 5-7 minutes or until squash is slightly browned.
- Add enough broth to the pot to cover the squash, and bring to a boil. Reduce heat and simmer until squash is tender, about 20-25 minutes.
- Remove from heat and use an immersion blender to puree the mixture until smooth. If you do not have an immersion blender, cool the mixture slightly and puree in batches in a blender.
- Return the soup to the pot and stir in heavy cream. Heat over low heat until warmed through.
- To serve, ladle soup into bowls and top with grilled bacon.
- Season with salt and pepper to taste.
