Camembert Velouté Recipe

Ingredients:
- 1 Camembert cheese wheel (250g)
- 2 cups of chicken stock
- 1/2 cup of heavy cream
- 1 tablespoon of unsalted butter
- 1 small onion, diced
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F. Remove the Camembert cheese wheel from its packaging, and slice off the top rind.
- Wrap the bottom and sides of the cheese wheel with aluminum foil, leaving the top exposed.
- Place the cheese wheel on a baking sheet and bake for 8-10 minutes or until the cheese has melted and is bubbly.
- In the meantime, melt the butter in a pan over medium heat.
- Add onions and garlic to the butter and cook for a few minutes until they are soft.
- Add chicken stock and stir well. Bring to a boil, then let it simmer for about 10 minutes.
- Remove the cheese from the oven and let it cool for a couple of minutes before adding it to the pan with the chicken stock. Stir to combine.
- Add heavy cream to the pot and stir well. Season with salt and pepper to taste.
- Purée the mixture in a blender until smooth and velvety.
- Return the soup to the pot and heat over medium-low heat until ready to serve.
- Serve hot, garnished with fresh herbs and a sprinkle of black pepper.
