Camembert Velouté Recipe

Ingredients:

  • 1 Camembert cheese wheel (250g)
  • 2 cups of chicken stock
  • 1/2 cup of heavy cream
  • 1 tablespoon of unsalted butter
  • 1 small onion, diced
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F. Remove the Camembert cheese wheel from its packaging, and slice off the top rind.
  2. Wrap the bottom and sides of the cheese wheel with aluminum foil, leaving the top exposed.
  3. Place the cheese wheel on a baking sheet and bake for 8-10 minutes or until the cheese has melted and is bubbly.
  4. In the meantime, melt the butter in a pan over medium heat.
  5. Add onions and garlic to the butter and cook for a few minutes until they are soft.
  6. Add chicken stock and stir well. Bring to a boil, then let it simmer for about 10 minutes.
  7. Remove the cheese from the oven and let it cool for a couple of minutes before adding it to the pan with the chicken stock. Stir to combine.
  8. Add heavy cream to the pot and stir well. Season with salt and pepper to taste.
  9. Purée the mixture in a blender until smooth and velvety.
  10. Return the soup to the pot and heat over medium-low heat until ready to serve.
  11. Serve hot, garnished with fresh herbs and a sprinkle of black pepper.
