Caramel and Walnut Tartlet
Ingredients:
- 1/2 cup walnuts
- 1/2 cup sugar
- 2 tablespoons water
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter, diced
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 prepared pie crust, rolled out and cut into 6 rounds
Instructions:
- Preheat the oven to 350°F (180°C).
- Spread the walnuts on a lined baking sheet and roast for 5-7 minutes, until lightly browned and fragrant. Let cool and chop coarsely.
- In a medium saucepan, mix the sugar and water together. Cook over medium heat, swirling occasionally, until the sugar melts and turns golden brown, about 8-10 minutes. Remove from heat and carefully whisk in the heavy cream, butter, vanilla extract, and salt. Stir in the walnuts.
- Roll out the prepared pie crust and cut into 6 equal rounds. Press each round into a 4-inch (10cm) tartlet pan. Prick the bottom of each crust with a fork.
- Divide the caramel-nut mixture evenly among the tartlet crusts.
- Bake for 15-20 minutes, until the crusts are golden brown and the filling is bubbly.
- Let cool to room temperature before serving.
