Vegetarian Stuffed Peppers

Ingredients:

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can of black beans, drained and rinsed
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 1 can diced tomatoes, drained
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat the oven to 375°F.
  2. Cut the tops off of the bell peppers and remove the seeds and membranes inside.
  3. In a large mixing bowl, combine the cooked rice, black beans, onion, garlic, diced tomatoes, cumin, chili powder, salt, black pepper, and cilantro.
  4. Stuff each bell pepper with the mixture and top with shredded cheddar cheese.
  5. Place the stuffed peppers in a baking dish and bake in the preheated oven for 30-35 minutes or until the peppers are tender and the cheese is melted and bubbly.
  6. Remove from the oven and let cool for a few minutes before serving.
