Vegetarian Stuffed Peppers
Ingredients:
- 4 large bell peppers
- 1 cup cooked rice
- 1 can of black beans, drained and rinsed
- 1/2 onion, chopped
- 2 cloves of garlic, minced
- 1 can diced tomatoes, drained
- 1 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
Instructions:
- Preheat the oven to 375°F.
- Cut the tops off of the bell peppers and remove the seeds and membranes inside.
- In a large mixing bowl, combine the cooked rice, black beans, onion, garlic, diced tomatoes, cumin, chili powder, salt, black pepper, and cilantro.
- Stuff each bell pepper with the mixture and top with shredded cheddar cheese.
- Place the stuffed peppers in a baking dish and bake in the preheated oven for 30-35 minutes or until the peppers are tender and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
