Caramel tiramisu


Caramel Tiramisu Recipe

Ingredients:

  • 1 cup heavy cream
  • 1 cup mascarpone cheese, at room temperature
  • 1/2 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup strong coffee or espresso, cooled
  • 24 ladyfingers, split in half lengthwise
  • 1 cup caramel sauce

Instructions:

  1. In a large bowl, beat the heavy cream until stiff peaks form.
  2. In another bowl, beat the mascarpone cheese, half of the sugar, and vanilla extract until smooth.
  3. Fold the whipped cream into the mascarpone mixture until fully combined.
  4. In a shallow dish, mix together the coffee or espresso and remaining sugar.
  5. Dip each ladyfinger half into the coffee mixture, making sure to fully coat.
  6. Arrange the soaked ladyfingers in a single layer in the bottom of a 9×13 inch dish.
  7. Spoon half of the caramel sauce over the ladyfingers, spreading evenly to cover.
  8. Add another layer of dipped ladyfingers, followed by the remaining caramel sauce.
  9. Spread the mascarpone mixture over the top layer of caramel sauce, making sure to evenly cover.
  10. Cover the dish with plastic wrap and chill in the fridge for at least 2 hours (or overnight).
  11. When ready to serve, dust the top of the tiramisu with cocoa powder or drizzle with additional caramel sauce, if desired.

Serving suggestions:

Serve this delicious caramel tiramisu as a dessert, garnished with fresh berries or chopped nuts, if desired. It pairs well with a cup of coffee or espresso, and makes for a sweet and indulgent treat after a meal.
