Carrots with Olives Recipe
Ingredients:
- 1 pound fresh carrots, peeled and sliced into rounds
- 1/2 cup pitted black olives, sliced in half
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh parsley, chopped (optional garnish)
Instructions:
- Preheat oven to 400°F (200°C).
- Place the sliced carrots and olives in a large mixing bowl.
- Drizzle the olive oil over the top of the carrots and olives.
- Sprinkle the thyme, garlic powder, salt, and pepper over the top of the vegetables. Toss everything together until the carrots and olives are evenly coated.
- Spread the carrots and olives out on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, stirring occasionally, until the carrots are tender and lightly browned.
- Remove from oven and transfer to a serving dish.
- Garnish with chopped parsley, if desired.
