Carrots with Olives Recipe

Ingredients:

  • 1 pound fresh carrots, peeled and sliced into rounds
  • 1/2 cup pitted black olives, sliced in half
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place the sliced carrots and olives in a large mixing bowl.
  3. Drizzle the olive oil over the top of the carrots and olives.
  4. Sprinkle the thyme, garlic powder, salt, and pepper over the top of the vegetables. Toss everything together until the carrots and olives are evenly coated.
  5. Spread the carrots and olives out on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, stirring occasionally, until the carrots are tender and lightly browned.
  7. Remove from oven and transfer to a serving dish.
  8. Garnish with chopped parsley, if desired.
