Cassoulet of Fish Recipe

Ingredients:

  • 1 lb firm white fish (e.g. cod or haddock), cut into bite-sized pieces
  • 1 can white beans, drained and rinsed
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 small fennel bulb, thinly sliced
  • 1 cup white wine
  • 2 cups fish or vegetable stock
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F / 180°C.
  2. Heat the olive oil in a large oven-safe pot or Dutch oven over medium heat.
  3. Add the onion, garlic, and fennel and cook until soft and translucent, about 5 minutes.
  4. Add the white wine and let it simmer until it has reduced by half.
  5. Add the fish or vegetable stock, thyme, bay leaf, and beans and bring to a simmer.
  6. Season the fish with salt and pepper and add it to the pot.
  7. Cover the pot with a lid and place it in the oven.
  8. Bake for 30-40 minutes until the fish is cooked through.
  9. Remove the pot from the oven and discard the bay leaf.
  10. Use a spoon to gently mash some of the beans and mix everything together.
  11. Adjust seasoning as necessary.
  12. Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.
