Catalan Cake Recipe
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3 large eggs, separated
- 1 cup milk
- 2 tablespoons orange zest
- 1/4 cup freshly squeezed orange juice
- 1/2 cup sliced almonds
- Powdered sugar for dusting
Instructions:
- Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate larger bowl, beat the butter until smooth.
- Add the egg yolks, one at a time, and beat until combined.
- Gradually add the flour mixture to the butter mixture, alternating with the milk.
- Add the orange zest and orange juice and mix well.
- In another bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the cake batter, along with the sliced almonds.
- Pour the batter into the prepared cake pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before removing the cake from the pan. Dust with powdered sugar before serving.
