Catalan Cake Recipe

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs, separated
  • 1 cup milk
  • 2 tablespoons orange zest
  • 1/4 cup freshly squeezed orange juice
  • 1/2 cup sliced almonds
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate larger bowl, beat the butter until smooth.
  4. Add the egg yolks, one at a time, and beat until combined.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk.
  6. Add the orange zest and orange juice and mix well.
  7. In another bowl, beat the egg whites until stiff peaks form.
  8. Gently fold the egg whites into the cake batter, along with the sliced almonds.
  9. Pour the batter into the prepared cake pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool for 10 minutes before removing the cake from the pan. Dust with powdered sugar before serving.
