Charlotte with Chocolate and Cherry, Black Forest Style

Ingredients:

  • 300g dark chocolate
  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp butter
  • 1/2 cup cherry pie filling
  • 24 ladyfingers
  • 1/2 cup cherry brandy
  • 1/2 cup sliced almonds (toasted)

Instructions:

  1. Melt the chocolate in a double boiler.
  2. In a separate saucepan, heat the heavy cream and sugar over medium heat, stirring constantly. Do not boil.
  3. Once the sugar has dissolved, remove from the heat and stir in the chocolate until smooth. Add the butter and continue to stir.
  4. Line a 9-inch springform pan with parchment paper. Dip the ladyfingers in cherry brandy and arrange them along the edges and bottom of the pan.
  5. Pour half of the chocolate mixture over the ladyfingers, spreading it evenly.
  6. Add a layer of cherry pie filling on top of the chocolate mixture.
  7. Repeat with another layer of ladyfingers soaked in cherry brandy and the remaining chocolate mixture.
  8. Chill the charlotte in the refrigerator for at least 6 hours or overnight.
  9. Before serving, remove the charlotte from the pan, sprinkle the toasted almonds on top and garnish with additional cherry pie filling.
