Cheesecake with Thermomix

Ingredients:

  • 250g digestive biscuits
  • 100g butter
  • 500g cream cheese
  • 200g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 lemon zest

Instructions:

  1. Preheat the oven to 150°C.
  2. Add the digestive biscuits to the Thermomix bowl and crush them for 10 seconds on speed 8.
  3. Melt the butter in the microwave and add it to the bowl. Mix for 10 seconds on speed 6.
  4. Place the biscuit mixture in a greased 23cm springform cake tin. Press down with a measuring cup or spoon to form the base. Place it in the fridge for 10 minutes to set.
  5. Wash and dry the Thermomix bowl. Add the cream cheese, sugar, eggs, vanilla extract and lemon zest. Mix for 2 minutes on speed 5.
  6. Pour the cheesecake mixture onto the biscuit base and smooth the top with a spatula.
  7. Bake the cheesecake for 50 minutes or until golden. Turn off the oven and leave the cheesecake inside for an additional 10 minutes.
  8. Take the cheesecake out of the oven and let it cool completely before removing it from the tin. Serve chilled.
