Chicken and Mushroom Lasagna Recipe
Ingredients
- 12 lasagna noodles
- 2 cups cooked, shredded chicken
- 2 cups sliced mushrooms
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups shredded mozzarella cheese, divided
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 jars (24 ounces each) marinara sauce
Directions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions, and set aside.
- In a large skillet, sauté mushrooms, onion, and garlic until tender. Add basil, salt, and black pepper.
- In a large mixing bowl, combine chicken, mushroom mixture, 2 cups of mozzarella cheese, ricotta cheese, and Parmesan cheese. Mix everything well.
- In a 9×13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Layer 4 lasagna noodles on top, followed by half of the chicken mixture.
- Continue the layering process with 4 more noodles, 1 cup of marinara sauce, the remaining chicken mixture, and 4 more noodles.
- Top the lasagna with the remaining marinara sauce and 2 cups of shredded mozzarella cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, or until the cheese is melted and bubbly.
- Let it sit for 10 minutes before serving.
