Chicken Bourguignon Recipe

Ingredients:

  • 4 slices of bacon, sliced into 1-inch pieces
  • 1 1/2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup flour
  • 2 cups sliced mushrooms
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon and place on paper towels to drain.
  2. Season chicken with salt and pepper. Dredge in flour and shake off excess.
  3. In the same skillet over medium-high heat, cook chicken in bacon fat until browned on all sides, about 5 minutes. Remove and set aside.
  4. Add mushrooms, onion, and garlic to the skillet and cook until softened, about 3 minutes.
  5. Add wine, chicken broth, tomato paste, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 5 minutes.
  6. Return the chicken and bacon to the skillet. Cover and simmer for 30 minutes, or until chicken is tender.
  7. Remove bay leaf and discard. Garnish with chopped parsley.
