Chicken Couscous Recipe
Ingredients:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 ½ cups couscous
- 2 cups chicken broth
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Heat 2 tbsp of olive oil in a large skillet over medium-high heat.
- Add the cubed chicken and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.
- Add the chopped onion to the same skillet and cook until soft, about 3 minutes.
- Add the minced garlic and cook for another minute, stirring constantly.
- Add the chopped red bell pepper and zucchini to the skillet and cook until tender, about 5 minutes.
- Add thyme, paprika, salt, and pepper to the skillet. Stir well.
- Add 2 cups of chicken broth to the skillet and bring to a boil.
- Stir in 1 ½ cups of couscous. Remove from heat and cover for 5 minutes.
- Stir in the cooked chicken. Serve hot.
