Chicken Couscous Recipe

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 ½ cups couscous
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Heat 2 tbsp of olive oil in a large skillet over medium-high heat.
  2. Add the cubed chicken and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until soft, about 3 minutes.
  4. Add the minced garlic and cook for another minute, stirring constantly.
  5. Add the chopped red bell pepper and zucchini to the skillet and cook until tender, about 5 minutes.
  6. Add thyme, paprika, salt, and pepper to the skillet. Stir well.
  7. Add 2 cups of chicken broth to the skillet and bring to a boil.
  8. Stir in 1 ½ cups of couscous. Remove from heat and cover for 5 minutes.
  9. Stir in the cooked chicken. Serve hot.
