Chicken Tagine with Dried Fruit Recipe

Ingredients:

  • 1 chicken, cut into pieces
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon saffron threads
  • 1/2 teaspoon black pepper
  • 3 cups chicken stock
  • 1 cup dried apricots
  • 1 cup pitted dates
  • 1/2 cup raisins
  • 1/4 cup honey
  • Salt, to taste
  • Chopped fresh parsley, for garnish
  • Cooked couscous, for serving (optional)

Directions:

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large ovenproof pot over medium heat. Add the chicken and cook until browned on all sides, about 8 minutes. Transfer the chicken to a plate and set aside.
  3. Add the onions and garlic to the pot and cook until the onions are translucent, about 5 minutes.
  4. Stir in the turmeric, ginger, cinnamon, saffron, and black pepper. Cook for 2 minutes.
  5. Return the chicken to the pot and add the chicken stock, apricots, dates, raisins, honey, and salt. Bring to a simmer.
  6. Cover the pot and bake in the preheated oven for 45 minutes, or until the chicken is cooked through and the sauce has thickened.
