Chocolate Ganache Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 12 ounces semisweet chocolate chips

Directions:

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
  3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix well until fully incorporated.
  4. Stir in boiling water, a little at a time, until the batter is smooth. It will be thin, but don’t worry.
  5. Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Remove from oven and let cakes cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
  7. To make the ganache, heat cream in a saucepan over medium heat until just boiling. Remove from heat and add chocolate chips, whisking until smooth.
  8. Let ganache cool until it thickens and becomes spreadable but is still pourable. You can speed up the cooling process by putting the ganache in the fridge for about 30 minutes, stirring occasionally.
  9. Place one cake layer on a cake stand or serving plate. Spread a layer of ganache over the top, leaving about 1/4 inch edge. Top with second cake layer.
  10. Spread remaining ganache over the top and sides of the cake, smoothing with a spatula. Refrigerate until ready to serve.
