Chocolate Mousse with Cream Recipe

Ingredients

  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 3 large eggs, separated
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. In a medium saucepan, heat 1/2 cup of the heavy cream until bubbles form around the edges of the pan.
  2. Remove from heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
  3. In a medium bowl, whisk together the egg yolks, sugar, salt, and vanilla extract. Slowly pour in the chocolate mixture while whisking constantly.
  4. In a large bowl, beat the remaining 1/2 cup of heavy cream until it holds stiff peaks.
  5. In another large bowl, beat the egg whites until they hold stiff peaks.
  6. Gently fold 1/3 of the egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites. Finally, fold in the whipped cream.
  7. Divide the mousse among serving dishes and chill for at least 2 hours or up to overnight. Serve chilled with additional whipped cream, if desired.
