Chocolate Mousse with Cream Recipe
Ingredients
- 1 cup heavy cream
- 8 oz semisweet chocolate, chopped
- 3 large eggs, separated
- 2 tbsp sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- In a medium saucepan, heat 1/2 cup of the heavy cream until bubbles form around the edges of the pan.
- Remove from heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
- In a medium bowl, whisk together the egg yolks, sugar, salt, and vanilla extract. Slowly pour in the chocolate mixture while whisking constantly.
- In a large bowl, beat the remaining 1/2 cup of heavy cream until it holds stiff peaks.
- In another large bowl, beat the egg whites until they hold stiff peaks.
- Gently fold 1/3 of the egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites. Finally, fold in the whipped cream.
- Divide the mousse among serving dishes and chill for at least 2 hours or up to overnight. Serve chilled with additional whipped cream, if desired.
