Clafoutis with Cherry Tomatoes Recipe
Ingredients
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 3/4 cup milk
- 2 tbsp fresh basil, chopped
- 1/2 cup grated parmesan cheese
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Grease a 9-inch baking dish with olive oil.
- Arrange the cherry tomato halves in a single layer in the baking dish and set aside.
- In a mixing bowl, combine flour, baking powder, and salt.
- In another mixing bowl, whisk together eggs, milk, basil, parmesan cheese, and pepper.
- Add the egg mixture to the flour mixture and whisk until combined.
- Pour the mixture over the cherry tomatoes in the baking dish.
- Bake for 30 to 35 minutes until the clafoutis is firm and lightly golden brown.
- Let it cool for 5 minutes before serving. Garnish with fresh basil if desired.
