COCONUT AND CARAMEL FLAN

Ingredients:

  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (13.5 ounces) unsweetened coconut milk
  • 1 cup sugar
  • 1/4 cup water
  • 5 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F.
  2. Combine the sweetened condensed milk and coconut milk in a bowl, mix well and set aside.
  3. In a heavy saucepan, combine the sugar and water over medium heat. Cook, stirring frequently, until the sugar dissolves and caramelizes to a golden brown color (about 10 minutes).
  4. Pour the caramelized sugar into a 9-inch round cake pan, swirling to coat the bottom and sides.
  5. In a separate bowl, whisk together the eggs and vanilla extract until well blended.
  6. Add the condensed milk mixture to the egg mixture and whisk together until well combined.
  7. Pour the mixture over the caramelized sugar in the cake pan and place it in a larger baking dish. Add enough hot water to the larger baking dish to come halfway up the sides of the cake pan.
  8. Bake for about 50-60 minutes or until a knife inserted in the center of the flan comes out clean.
  9. Remove the flan from the oven and allow it to cool to room temperature. Then carefully invert it onto a serving plate. Serve chilled.
