Cod in Sauce Recipe

Ingredients:

  • 4 Cod fillets
  • 2 tbsp. olive oil
  • 1 diced onion
  • 2 diced garlic cloves
  • 1 tsp. smoked paprika
  • 1 can diced tomatoes
  • 1 tbsp. tomato paste
  • 1 tbsp. capers
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Once the oil is hot, add the diced onion and cook until tender, around 5 minutes.
  4. Add the diced garlic and smoked paprika to the skillet and cook for an additional minute, stirring frequently.
  5. Pour in the can of diced tomatoes and tomato paste and stir everything together.
  6. Add the capers and chicken broth to the skillet and bring the mixture to a boil.
  7. Season the cod fillets with salt and pepper and then add them to the skillet, skin side down.
  8. Cook the fillets for 3-4 minutes until the skin is crispy.
  9. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the fish is fully cooked.
  10. Once done, take the skillet out of the oven and serve immediately. Garnish with fresh parsley or lemon wedges if you like.
