Cod Rillettes Recipe

Ingredients:

  • 1 lb. fresh cod (skin removed and cut into 1-inch pieces)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup crème fraîche
  • 1 tbsp. lemon juice
  • 1 tbsp. chopped fresh dill
  • 1 tbsp. chopped fresh parsley
  • 1 tsp. Dijon mustard
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions:

  1. Season the cod pieces with 1 teaspoon of salt and 1/2 teaspoon black pepper and set aside.
  2. Preheat a large skillet over medium-high heat and melt 1 tablespoon of the butter.
  3. Add the cod to the skillet and cook, stirring occasionally, until the fish is just cooked through, about 5-6 minutes.
  4. Remove the skillet from the heat and let the fish cool.
  5. In a medium mixing bowl, combine the rest of the unsalted butter, crème fraîche, lemon juice, chopped fresh dill, chopped fresh parsley, Dijon mustard and mix them until smooth.
  6. Add the cooked cod to the mixing bowl and stir well to combine with the butter mixture.
  7. Transfer the mixture to a ramekin or serving bowl and chill in the fridge for at least 30 minutes before serving.
  8. Enjoy with toast points or crackers.
