Cod Rillettes Recipe
Ingredients:
- 1 lb. fresh cod (skin removed and cut into 1-inch pieces)
- 1/2 cup unsalted butter (softened)
- 3/4 cup crème fraîche
- 1 tbsp. lemon juice
- 1 tbsp. chopped fresh dill
- 1 tbsp. chopped fresh parsley
- 1 tsp. Dijon mustard
- 1 tsp. salt
- 1/2 tsp. black pepper
Instructions:
- Season the cod pieces with 1 teaspoon of salt and 1/2 teaspoon black pepper and set aside.
- Preheat a large skillet over medium-high heat and melt 1 tablespoon of the butter.
- Add the cod to the skillet and cook, stirring occasionally, until the fish is just cooked through, about 5-6 minutes.
- Remove the skillet from the heat and let the fish cool.
- In a medium mixing bowl, combine the rest of the unsalted butter, crème fraîche, lemon juice, chopped fresh dill, chopped fresh parsley, Dijon mustard and mix them until smooth.
- Add the cooked cod to the mixing bowl and stir well to combine with the butter mixture.
- Transfer the mixture to a ramekin or serving bowl and chill in the fridge for at least 30 minutes before serving.
