Cod with Walnuts
Ingredients:
- 4 cod fillets
- 1/2 cup chopped walnuts
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine the chopped walnuts, flour, Parmesan cheese, and breadcrumbs. Mix well.
- Season the cod fillets with salt and black pepper.
- Coat the cod fillets in the walnut mixture, pressing the mixture into the fillets so they are well-coated.
- In a large skillet, heat the olive oil and butter over medium-high heat. Add the coated cod fillets and cook for 2-3 minutes on each side, until they are golden brown.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until the cod is cooked through and flaky.
- Remove the skillet from the oven and let the cod cool for a few minutes.
- Serve the cod on plates and garnish with extra chopped walnuts and chopped parsley, if desired.
