Cod with Walnuts

Ingredients:

  • 4 cod fillets
  • 1/2 cup chopped walnuts
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the chopped walnuts, flour, Parmesan cheese, and breadcrumbs. Mix well.
  3. Season the cod fillets with salt and black pepper.
  4. Coat the cod fillets in the walnut mixture, pressing the mixture into the fillets so they are well-coated.
  5. In a large skillet, heat the olive oil and butter over medium-high heat. Add the coated cod fillets and cook for 2-3 minutes on each side, until they are golden brown.
  6. Transfer the skillet to the oven and bake for 10-12 minutes, or until the cod is cooked through and flaky.
  7. Remove the skillet from the oven and let the cod cool for a few minutes.
  8. Serve the cod on plates and garnish with extra chopped walnuts and chopped parsley, if desired.
