Cold Mashed Chickpeas Recipe
Ingredients
- 1 can of chickpeas
- 2 cloves of garlic, mashed
- 1 tablespoon of olive oil
- 1 lemon, freshly squeezed
- 1/4 tsp of salt
- black pepper to taste
Instructions
- Drain and rinse the chickpeas in a colander. You can save the water for later use as aquafaba.
- In a bowl, mash the chickpeas with a fork or a potato masher until you get a slightly chunky consistency.
- Add the mashed garlic, olive oil, freshly squeezed lemon juice, salt and black pepper. Mix well.
- Refrigerate for at least 30 minutes before serving.
