Quick and Easy Potato Bombs
Ingredients:
- 5-6 medium sized potatoes
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1/2 cup cheddar cheese, shredded
- 1/4 cup green onions, chopped
- 1/4 cup bacon bits
- Salt and pepper to taste
Directions:
- Preheat the oven to 400°F.
- Wash and peel the potatoes. Cut them into halves and scoop out the center.
- In a separate pan, melt the butter and add minced garlic, salt, and pepper to taste.
- Take a bowl and mix together the scooped-out potato, garlic butter, cheddar cheese, green onions, and bacon bits.
- Add salt and pepper to taste.
- Stuff this mixture back into the hollowed-out potato halves.
- Line a baking tray with parchment paper and place the stuffed potatoes on it.
- Bake in the oven for 20-25 minutes until the potatoes are cooked through and crispy on the outside.
- Serve hot with a dollop of sour cream and chopped chives as a garnish.
