Colombo De Veau Recipe

Ingredients:

  • 2 lbs of diced veal
  • 1 onion, roughly chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 2 tbsp of Colombo spice blend
  • 1 can of coconut milk
  • 1 tbsp of tomato paste
  • 2 tbsp of vegetable oil
  • Salt and pepper
  • 3 cups of water

Instructions:

  1. In a large skillet, heat the oil over medium-high heat.
  2. Add the diced veal and season with salt and pepper.
  3. Cook the veal for 5-7 minutes until browned on all sides. Remove from the skillet and set aside.
  4. Add the chopped onion, red bell pepper, and green bell pepper to the same skillet. Cook until tender and slightly caramelized.
  5. Add the minced garlic and tomato paste to the skillet. Stir for a minute.
  6. Add the Colombo spice blend and stir for another minute.
  7. Return the cooked veal to the skillet and stir until coated in the spice and vegetable mixture.
  8. Add the water and let it come to a boil. Cover and reduce heat to low. Simmer for an hour.
  9. Stir in the coconut milk. Simmer for another 10-15 minutes.
  10. Serve over rice or with crusty bread.
