Country Pâté Recipe

Ingredients

  • 1 pound ground pork
  • 1/4 pound cooked ham, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground black pepper
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup dry white wine
  • 1/4 cup heavy cream
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix together ground pork, diced ham, garlic, thyme, allspice, and black pepper until well combined.
  3. Add diced onion, celery, dry white wine, heavy cream and eggs to the meat mixture. Stir until well combined.
  4. In a separate bowl, whisk together all-purpose flour, salt, and freshly grated nutmeg.
  5. Add the flour mixture to the meat mixture and stir until just combined.
  6. Grease a loaf pan and spoon the mixture into the pan.
  7. Bake for about an hour, or until the center of the pâté reaches 160°F.
  8. Remove the pâté from the oven and let it cool to room temperature.
