Cream of Watercress

Ingredients:

  • 1 large bunch watercress, stems removed and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. In a large pot over medium heat, melt the butter and sauté the onion and garlic until softened (about 5 minutes).
