Creole chicken


Creole Chicken Recipe

Ingredients:

  • 6 chicken thighs
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can of diced tomatoes
  • 1 tablespoon of tomato paste
  • 1 cup of chicken broth
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Mix the smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt and pepper together to form a spice rub and then rub onto the chicken thighs.
  3. Heat the vegetable oil in a large skillet over medium-high heat and sear the chicken until brown on both sides. Remove chicken from skillet and set aside.
  4. Add the onions, garlic, and bell peppers to the skillet and cook until softened, stirring occasionally for about 5-7 minutes.
  5. Add the diced tomatoes and tomato paste and cook for another 5 minutes.
  6. Slowly add chicken broth to the skillet and bring to a simmer.
  7. Add the chicken thighs back to the skillet and spoon the sauce over the top of the chicken.
  8. Cover the skillet with a lid or foil and bake in the oven for 45 minutes or until the chicken is cooked through and tender.

Serving Suggestions:

Serve Creole Chicken over rice or with a side of okra and collard greens for a classic Creole meal. Garnish with chopped cilantro or green onions, if desired.
