Creole Chicken Recipe
Ingredients:
- 6 chicken thighs
- 1 tablespoon of smoked paprika
- 1 tablespoon of garlic powder
- 1 tablespoon of onion powder
- 1/2 teaspoon of cayenne pepper
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can of diced tomatoes
- 1 tablespoon of tomato paste
- 1 cup of chicken broth
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Mix the smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt and pepper together to form a spice rub and then rub onto the chicken thighs.
- Heat the vegetable oil in a large skillet over medium-high heat and sear the chicken until brown on both sides. Remove chicken from skillet and set aside.
- Add the onions, garlic, and bell peppers to the skillet and cook until softened, stirring occasionally for about 5-7 minutes.
- Add the diced tomatoes and tomato paste and cook for another 5 minutes.
- Slowly add chicken broth to the skillet and bring to a simmer.
- Add the chicken thighs back to the skillet and spoon the sauce over the top of the chicken.
- Cover the skillet with a lid or foil and bake in the oven for 45 minutes or until the chicken is cooked through and tender.
Serving Suggestions:
Serve Creole Chicken over rice or with a side of okra and collard greens for a classic Creole meal. Garnish with chopped cilantro or green onions, if desired.
