Stuffed Zucchini Recipe
Ingredients:
- 4 medium zucchinis
- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/4 cup tomato sauce
- 1/4 cup breadcrumbs
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella cheese
- 2 tbsp olive oil
Instructions:
- Preheat oven to 375°F.
- Cut each zucchini in half lengthwise. Scoop out the seeds and flesh using a spoon. Leave about 1/4 inch of flesh around the skin.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- In the same pan, add ground beef and brown it while stirring. Add tomato sauce, breadcrumbs, herbs, salt and pepper to the mixture. Cook for about 5 minutes more stirring continuously until the beef is fully cooked and the sauce becomes thickened.
- Fill the zucchini halves with the mixture. Place zucchinis in a baking dish and cover it with foil.
- Bake in the oven for 30 minutes.
- Remove the foil and sprinkle cheese on top of each zucchini half. Bake for another 10 minutes until the cheese melts and turns golden brown.
- Serve hot and enjoy!
