Stuffed Zucchini Recipe

Stuffed Zucchini

Ingredients:

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 1/4 cup breadcrumbs
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions:

  1. Preheat oven to 375°F.
  2. Cut each zucchini in half lengthwise. Scoop out the seeds and flesh using a spoon. Leave about 1/4 inch of flesh around the skin.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  4. In the same pan, add ground beef and brown it while stirring. Add tomato sauce, breadcrumbs, herbs, salt and pepper to the mixture. Cook for about 5 minutes more stirring continuously until the beef is fully cooked and the sauce becomes thickened.
  5. Fill the zucchini halves with the mixture. Place zucchinis in a baking dish and cover it with foil.
  6. Bake in the oven for 30 minutes.
  7. Remove the foil and sprinkle cheese on top of each zucchini half. Bake for another 10 minutes until the cheese melts and turns golden brown.
  8. Serve hot and enjoy!
