Ingredients:

  • 1 cup all-purpose flour
  • 1 1/4 cups milk
  • 2 large eggs, beaten

  • 1 tablespoon grated orange zest

  • 1/4 cup Grand Marnier or Cognac

Directions:

  1. In a large mixing bowl, whisk together flour, milk, eggs, sugar, salt, melted unsalted butter, and orange zest until well combined.
  2. Heat a non-stick crepe pan over medium heat. Pour batter into the center of the pan, swirling to coat the bottom of the pan with a thin layer of batter. Cook for 1-2 minutes or until the edges of the crepe begin to lift. Flip the crepe and cook for an additional 30 seconds. Repeat with remaining batter, stacking cooked crepes on a plate as you go.
  3. In a small saucepan, combine orange juice, Grand Marnier or Cognac, and sugar. Cook over medium heat until the sugar has dissolved, stirring occasionally.
  4. Add softened unsalted butter to the saucepan and whisk until the butter has melted and the sauce is smooth.
  5. To serve, fold each crepe in half, then in half again to form a triangle. Arrange crepes on a serving platter or individual plates. Drizzle the orange butter sauce over the crepes. Serve immediately.
