Croissants for the Aperitif Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp. salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
  • 1/2 cup cold water
  • 1 1/2 tsp. active dry yeast

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, and salt.
  2. Add the cold butter cubes to the bowl and mix with a pastry blender until the mixture becomes coarse and crumbly.
  3. In a separate bowl, whisk together the cold water and active dry yeast. Then pour the mixture into the large mixing bowl with the flour mixture.
  4. Mix all the ingredients together with a wooden spoon until a dough is formed. Knead the dough for a few minutes until it becomes smooth. Wrap the dough in plastic wrap and refrigerate for 20 minutes.
  5. Roll out the dough in a rectangular shape, then fold the left third of the dough over the center, and then fold the right third of the dough over the center. Roll out the dough again and repeat the folding process two more times. After the third fold, wrap the dough in plastic wrap and refrigerate overnight.
  6. Preheat the oven to 375°F. Roll out the cold dough and shape it into crescents. Place the crescents on a parchment-lined baking sheet and brush with an egg wash or plain milk. Bake in the oven for 15-20 minutes or until the croissants are golden brown.
  7. Remove from the oven and serve warm.
